AGED RAW MILK CHEESE
Jersey DroverRaw milk cheese with a natural rind, this is a Tomme cheese with a mild yet complex flavor. It is earthy and creamy with a soft paste. Keeping with tradition, we only make this cheese in the winter and age it about three months.

GruyereAn Appalachian take on a Swiss standard. Firm, nutty, and sweet, our Gruyere is aged for six months for an unforgettable flavor.

Country JackCountry Jack is an aged raw milk, full fat version of Monterey Jack. It has a delectable creamy texture and complex, bold, bright flavor. Country Jack makes an excellent table cheese and is a favorite for culinary uses. It makes any meal extraordinary.

ClovertonA fresh, handmade, delectable soft cheese, Cloverton can be used for anything from dips to dessert, ice cream to lasagna. With dates or smoked fish. On pizza or with a spoon. We really use Cloverton for everything. Made weekly in small batches for your enjoyment—and ours!
